Just Us

Just A Distillery Inc. was founded on August 21, 2018, with a mission to craft historically inspired rums free from artificial colors or flavors. Our goal is to showcase how exceptional rum could have been made in the early days of the New World. Our spirit is a tribute to tradition, standing on the shoulders of giants.

Just Rum began with an inherited pot still and a bold experiment: to recreate a rum described in the memoirs of Jean Baptiste Labat (1693–1705). This journey meant sourcing authentic ingredients, like fair-trade sugarcane and a 350+ year-old legacy strain of Caribbean yeast. Similar to what would have been available in that era; the result is a uniquely flavorful, white rum, surprisingly smooth and drinkable at a powerful 51% ABV. 

Rum has a deep and complex history, much of it lost in time or tangled in conflicting accounts. What we do know for certain is that early rum was high-proof, robust, and distilled in single pot stills. Flavors came naturally from infused spices, fruits, and the wood of the barrels they were stored in. 

At Just A Distillery, we honor that heritage. Every bottle of Just Rum is a nod to the past - a reminder of how rum was, and still can be, crafted with authenticity.
